Infused Extra Virgin Olive OIl
Infused olive oil is a two-step process. First the olives are "cold pressed" and the olive oil (fruit juice) is extracted from the olives. The infusion is created in two different ways; either a distillation of the flavor (like an extract or essential oil) is added to the extra virgin olive oil or the flavor is added by pouring the EVOO over the herbs and allowing them to blend together for awhile.
